Which would be correct?
Each person should hand in his or her/their test.

They also just say Each person should hand in his test.It's not a serious crime to say 'his' rather than 'his or her'.

They are all correct: his, his or her, her, their.

They are all third person possessives, so they are all correct with each.

Hi,
I always use "they" and "their" in cases like that. Using "his or her" is distracting, it catch people's attention and distract them. Using "his" is not good, because it sounds like you are referring only to males, even though everybody knows you you are referring to everyone, in general. I heard that some women don't like that "him", they felt kind of excluded. I realized they are right,
