My girlfriend and I just got a new appartment, but when trying to refer to it I got stuck.

Yeah, this question kind of raises a sucky point in English, doesn't it? None of the ones you try will every sound right. The apartment Kayla and I just got is going to sound "more right" than the correct form of "Kayla and my apartment" which indicates joint ownership (or in this case, residency).

If you wanted to talk about each of you having your own, by the way, it would Kayla

Alongside the others' comment, here is my two cents as far as using "I" in the sentence is concerned.

I just moved into / got a new apartment with my girlfriend Kyla.
