Help with my composition

Hello

Is it possible to use picking up instead pick up in the following sentence.

Most dabbas, or lunches, reach their destination after passing through several pairs of hands. A typical scenario would have one person on a bicycle pick up a dabba by 9:00 a.m. from about thirty different addresses.

I'm not sure but I think picking up is not possible because I can't find any events or things that are happening or on progressive.
