NO! 'Stars is functioning here as a noun.

Apparently not. The words "You" and "stars" are clearly nouns. "Are" is clearly the verb. This leaves the word "all," which can be a noun or adjective. Note if we do some experimenting with this sentence, we come up with:

You are stars.

You all are stars.

All are stars.

All three of the above sentence retain much, or all, of the meaning of the original sente

It's a sentence, not a phrase, and it has no adjectives.

'You' is a pronoun, not a noun.
