Help with choosing words

The following passage is from someone trying to describe the table below. I make my questions in red about those green parts. Please help me and answer them if you would. Thanks a lot.

The sales at this small restaurant during the week of October 7 to 13th (usually we say the week of October 7, right?) followed a fairly set pattern from Monday to Friday (on the business days?), and then showed notable shift (Do you like this word? What else can we use here?) on the weekend. The lunch and dinner sales during the week peaked (in total) on Friday and then dipper (typo? Should be dipped?) down as the weekend set in (on the weekend?).

By the way, what does a set pattern mean? A reasonable pattern following what people would expect?
