and can I say 'most of the technology' or just 'most technology'?

If you say "most technology" you are speaking VERY broadly, about all technology in general - computers, medical, industrial, etc. Since you are speaking about some specific technology - the one in your industry - you are better off saying "most of the technology" to specify that you mean the type you have been speaking about.
