Help needed for formal e-mail

Hello

I need to write some formal e-mails, to British recipients (university professors). Could you please help me with these two questions?

1) If the recipient has two last names (eg. Smith-Jones) how do I address her? "Dear Professor Smith-Jones"?

2) Is it wrong if I start the mail with their full title, e.g.




Prof. Mary Smith-Jones
University of Chester, UK





Dear Professor Smith-Jones,

...
