What is the difference between the sentences A and B? I feel like it is weird and redundant to add "that", but does it make the sentence incorrect?

A: "You are the only one I know."
B: "You are the only one that I know."

It reminds me of the classic Grease song, where the lyrics go "You are the one that I want", so I guess B isn't downright incorrect - but is it just a matter of "artistic freedom" or ....?

Thank you!
