I would've said the first sentence was correct? I know this sentence is correct. My question is, was really the first one correct or we don't know whether the first one was correct or not?

The second one does not clearly involve 'I'.

I am curious. I am not sure I follow your logic in using ' I would have said ....' by itself without a conditional situation.
In my opinion, just say " I would say the first one was correct...".
