Can I say,

(b) The elephant is the land animals.

The elephant is one of the heaviest (of all the) land animals. (They are not extinct!)
(b) The elephant is the land animals. No.

Example:

The elephant is a heavy land animal that has a long probiscus and lives on land. (We are describing the characteristics of the animals that belong to the elephant species.)
