Hearing problem (from Ramsay's Kitchen Nightmares)

Hi guys,

I finished completely the translation of the mentioned Kitchen Nightmares episode with Gordon Ramsay. Only one problem left and I sort of need your native ears to solve it... Emotion: smile

I found a final part of that episode on youtube,

could you please move the slider to 4:45 and tell me what Gordon says in there, he's recapitulating what he has on the plate...

Fish, cockel butter,
parsely,
sauteed local (?)****(?) and sautee potatoes.
Rustic simple and so unpretentious.
It's extraordinary.

I agree with "ceps" but I don't hear "cooked in butter". To me it sounds like he is saying "cockle butter" per Tomas' post. I'd never heard of it, but a smattering of web hits suggest that such a thing does exist.

a cockle buter is some butter he fried cockles in and then left the entire thing to solidfy, it does exsist but not in this case. Which web did you search? Oh by the way I used to do this **** for a living!

No doubt to my ear - 'cockle butter'

you pour the cockle butter over the top of the fish when it is done. you dont cook the fish inthe cockle butter.
