1) most bovines cattle included when trying to lay down, "kneel" on their front legs & drop their HEADS FIRST, then drop their hind end. When rising from laying they raise their back end first, then raise their HEADS LAST. So "head 'em up" could first mean to "get their heads up" &/or "get 'em on their feet".
