Is the underlined sentence natural? Any suggestion is welcome.

Monica observed him through the window surreptitiously. David sat bending over at the mahogany table, oblivious to his surroundings. He would crack open a peanut after peanut, remove the skin and pot it into his mouth.

Skin is correct as an uncountable noun but skins is more natural?

...removing the skin Vs ...removing the skins

Also, is the first sentence grammatically incorrect? Or just unnatural?
