I'd appreciate if you give an answer about my question.

Is it possible to use picking up instead of pick up in the following sentence.

Most dabbas, or lunches, reach their destination after passing through several pairs of hands. A typical scenario would have one person on a bicycle pick up a dabba by 9:00 a.m. from about thirty different addresses.

Thank you, but I wonder if there is any big difference in meaning between picking up and pick up.

Since the ing form is used to describe the continuous or progressive things, I don't think picking can go with by, which means finishing things before a particular time not doing something in a period of time.
