Have / had and backshifting

Hello! I have some questions.

1. If you heard "I had a problem " it is not related in present?
Because I received some mail and it says "sorry. We had a preblem and couldn't keep in touch for a while " I think "we have a problem "is related in present.

2. I bought a car that it was /is red
In this case , backshifting doesn't be needed?
I knew this food that it is nice (is it okay?)
Backshifting is always confused.

You are confusing grammar with reality. Grammatically and conceptually, the problem does not exist now and the failure to keep in touch
