Have a good evening?

Imagining this: It is 23:00 at night. You are waiting for your coffee in Tim Hortons. After getting the coffee what do you say to the servant except for a thank-you?

I would like to say something like "have a good day" or "have a good evening." But I am really confused about choosing the right word for the timing. Could you help me with this?

I knew it's a joke.
I really should have asked what does it mean by "fellow?" The google translator gave me a rediculous explanation. But now I know it. It means similar or almost equal, right? I can use it like this:

Tom has been in Canada for decades, he acts like a fellow canadian.

Anyway, I really love Canada, a nation of friendly and great people!
