Is either "haste" or "hurry" OK in the following sentence?
- They took the patient in haste/ in a hurry to hospital.

"haste" sounds too formal to my ear, though it's not wrong. At least where I live, you will almost never hear "in haste" in a conversation. That said, there is still a problem with They took the patient in a hurry to hospital.

We know what it means, but technically, it can be misinterpreted thus:
They took [ the patient who was in a hurry ] to hospital.
