You can say "The fish is a water-dwelling animal with gills and fins" as a general statement about the animal we call a fish.
You can say "The fish seems to have developed a spot" to talk about a specific animal.

But when you refer to "fish" as something we eat, don't use "the."

Ostrich tastes like a good, lean steak.
Fish is a good source of protein.
