Has had

Hi Everyone. I want to ask two questions.

1.) When do you use has had, have had and had had?
2.) Im really having trouble with the verb tenses especially when I write about the past. For example:

Are the following constructions correct?

1.) He  also solemnly declared that he doesn’t want to be a priest, because priests have dark skin. Our Parish priest, by the way, is an Indian national.

2.) When he was 4, he challenged me to a race, and although I outran him as all of you would expect, after 4 laps, about 75 meters each lap, he was still full of energy and I had given up.

They are about my nieces and nephews about 4 - 8 years of age, so no offense regarding the "color" thing.
