Correct the following please:

I had had dinner this hour.

I had taken course in dancing.

There's no reason to use the past perfect unless you introduce some other past action as well.

I had taking a dance class, so I thought I'd be able to handle to role in the play.

Otherwise, just say "I've taken a dance class."
