Had in being chosen

Someone tells the story about what he saw in Africa.

He says that there were a lot of people who were hungry and there was a person who chose who would get food today and who wouldn't (they didn't have enough for everyone).
He's also describing a certain boy who hoped he would be chosen that day and get some food, but he wasn't.

The author writes: I don't know if that boy lived or died, but what was incredible about the whole situation was the amount of dignity these people had in being chosen.

--- I'm not sure I understand the last part. They had dignity because they waited until somebody chose them so that they could eat something that day? The part "had in being chosen" is not clear to me.
