I have a web site where users can build invitation in some point I want to ask them to "enter the name/names for who the event for "

My real question Is the "guest of honor" is the event owner ...
for example if my son Dan have a birthday, is he the guest of honor.
or in other case if I have a birthday can I wrote my name "Jack" as the "guest of honor" ?

The "guest of honor" is the person being feted, or the person in whose honor the event is being held. The person who owns (organizes) the event is the person paying for it, which usually is not the guest of honor.
