You hair will get greasy/oily after a week.

I don't see any great difference except that greasy hair connotes dirty hair to me. Oily might be just a natural condition. Some people's hair is naturally more oily than others'.

Is your hand greasy or oily after having fried chicken? assuming you ate with your fingers.

CJ, sorry if this question results in the same answer. I don't feel convinced about the difference. Could you explain why you prefer greasy over oily in this context?

It's stronger than "prefer". I wouldn't even consider using oily in that context! It's because (and I realize this is an exaggeration!) everybody I know is constantly saying they don't care for fried foods because such foods are too greasy. No one ever uses the word oily in reference to fried foods. It has more to do with repeated common usage than any big difference in me
