Grammar I'm confused about or not sure of - # 1

Hello,

Trying to learn how to fix my grammar, but don't know what "grammar topic" a particular problem falls under; so I'm just going to give examples.

SENTENCE Example 1:
"Their names have been changed to protect their identities."

But I heard Suze Orman say in one of her DVDs:
"Their names have been changed to protect their INDENITY."

SENTENCE Example 2:
Everyone's back was turned.
VERSUS
Everyone's backs were turned?

"You can't act nice and then, when everyone turns their back, act rude. [(what is the CORRECT way to say this and why)?]

Appreciate your explanation of these examples AND direct links to webpages that deal with these topics would also be appreciated (but not required).

The first one is correct. It is the plural form because you have a plural subject (their).
