Grammar help! i need your help very much! please!!

which one is correct?
There were a lot of papers or paper?
He does a lot of travelling in his job or He does lots of travelling in his job?

when do i have to use plural form after 'lot of' and when single form?
On what is it depend?

the next one:
There weren't any restaurant or restaurants?

for me it's vital to know these things, please answer!
