A central healing quality of art therapy is the capacity to promote the development of relationships. Although some artists state that they must be left alone [doing / to do] their work, still most intend that someday others will acknowledge their creative work.
Q. In the original paragraph, 'to do' is written. But, I think 'doing' is also grammatically acceptable. Am I wrong?

You're not completely wrong, but 'to do' is very much better. 'to do' suggests the purpose of being left alone. That's the intended meaning. They need to be alone or they can't do their work.
