From Mondays to Fridays, young minds communicate with their parents in about one hour (for the middle age groups) and in about two hours (for the rest).

Is this sentence grammatically correct?

Assuming you are talking about the duration of the communication, it should be " for about one hour / two hours". "the rest" appears to include both younger and older age groups. Is that what you intend?
