Why hasn't "the" came before the lines I've underlined them?

The first one is a normal way of putting that. "Best man" is being treated like an official title, the way you might drop the article for "president". People also say "the best man" in that setting with no difference in meaning.

The other one is abbreviated speech. It is equivalent to "They are the best team in the world." The speaker simply dropped the first part. It is emphatic.

He was best man at my wedding.

"best man" is a role, a title. The zero article tells the reader that the noun phrase "best man" is a title, and not the best male person who was at the wedding ceremony.

The groom is the man getting married. The best man is a good friend of the groom who carries the wedding ring and performs other ceremonial duties.
