Does the sentence "I haven't seen the ship tried." mean "I haven't seen the ship when it was tried."? Or "I haven't seen the ship that was tried."

Neither. It's "I've never seen anyone try the ship".
'try' seems like the wrong verb, however. Maybe 'tested'?
There are also more elaborate phrases like 'taken for a sea trial'.
