Is it grammatically correct to point to a girl and ask a student:
"What's this? It's a girl"
or it (i.e. What's this?) is just used for things?

I'd ask "Who's that girl?"

In my opinion, your example, although grammatically correct, is inappropriate and demeaning to the girl in question.
