Which sentence is more correct and why:
To do this job, one needs peace of mind, WHICH I don't have now.
To do this job, one needs peace of mind THAT I don't have now.
In my opinion, WHICH is more appropriate but i'm not sure.

Besides, I've come across two versions:
peace OF mind and peace IN mind.
Are both of them equally correct?

I prefer the second. Note the difference in the use of a comma.
