As a polite request, "would" is more polite.

As a simple question, "would" implies an unstated condition. "Would you come with me if I paid you?"

Edit. MrM's answer is "more correct." My unstated condition would presumably be "stated" in the context.

Eg.,
A: I need someone to accompany me on holiday. I might even be willing to pay someone.
