1) I don't think you have met my wife.
2) I think you haven't met my wife.

I've seen 1) version more often, but 2) is gramatically correct?
If so, 2) sounds stronger than 1)?

I wouldn't use "stronger." It just sounds strange, as if the speaker meant this:

I think you don't know my wife.

which is for a different context.

#1 is <I reject> you have met my wife. #2 is <I accept> you have not met my wife. #1 is more direct - it doesn't require the multi-step logic analysis of #2.
