Given the word:

“gourmet”

An American wrote its pronunciation ‘Gore-may.’ and read like it.
But an American dictionary says ’g??r-me?.’
Can we use both?

The French pronunciation is as the dictionary you quote says. Americans don't have to follow the French pronunciation, but it is my feeling that we should keep the pronunciation as close to the original as possible if we are borrowing the word. The same goes, by the way, for boutique.
