Good for ellipses?

Hi, I think it is a common knowledge that some words can be ellipted in certain sentential situations like these.

I saw a good-looking person (who was) wearing a blue striped shirt.
I think it was her (that) he went out with..

Can the ones, an adjective and what looks to be a prepositional phrase, in parentheses ellipted?

It's a good book for those of us (who are) hungry for a good reading experience.
It's a good food for men (who are) in possession of good culinery taste.
