Is this sentence correct? Would you say go without?
I would be nice if I didn't have to bring a book back that you've managed to go without for the past 6 months.

Yeah, but it depends on context.

If "I" is used it indicates mental position of speaker.But if It would be nice used it indicates speaker is teaching manners to other person.
If they had fight over book and then speaker is saying the sentence in that context I would be nice is fine.(it means your such activity made me so sad and nervous and h
