buffet refers to the fact that you serve yourself.
all-you-can-eat restaurant refers to being offered as much food as you want at a restaurant.

The two ideas are completely separate.

"Buffet" is just a method of getting food to people. Instead of having waiters bring the food, people get their own food at the buffet. It has nothing to do with cost. You can even go to a private home for a holiday gathering and find that food is served at a buffet. There is no cost to you, of course.

In my country we're more likely to say "eat-all-you-can" than "all-you-can-eat" restaurant or promo. Is that also acceptable?

Hi,

Hmmm. Where I live, 'all you can eat' automatically means a self-service buffet.

I've never even heard of a restaurant where the waiter just keeps bringing you as much food as you want.
