Do I use "go" or "goes?" Is the sentence correct?

I want to see Kobe Bryant go/goes to the carnival and play their basketball game.

The structure is 'see/hear/feel/etc someone/something do'. The finite verb is see/hear/etc. Do is a bare infinitive complement, not a finite verb.
