Go + -ing form

Would you please explain when you use "go + gerund" in activities such as "go skiing, go swimming, go dancing and so on"?

By the way, does "go walking" exist?

Unfortunately, you just use them when there is such an expression already established in English. As far as I know, you can't just make up new ones like go writing , go cooking , and so on.
