"Go in cold" means to try to do business without an introduction to or an appointment with the person you're want to do business with. You just drop by and ask to meet. This is no doubt related to the term salespeople use -- "cold calling."

Not in this context. The artist wasn't trying to start a project but a business relationship. LIkely he had experience, work (in this case photographs), and plenty of ideas. What he didn't have was an appointment with the gallery owner.
