go back to VS date back to

The origin of Italian cuisine dates back to ancient Roman times.

I have three questions regarding this sentence.

1. Is it possible to say, "goes back to" instead of "dates back to?" in this context? Or it doesn't make sense?

2. Is it possible to say, "began in" instead of dates back to?

3. Italian cuisine, Italian cooking, and Italian food can be used almost interchangeably?
