ex. I got my watch stolen.

In this example sentence, if appropriate contexts are given, can there be two possible interpretations?
(1. Unwanted incident happened to me without my noticing
 2. I let some person steal my watch on purpose.)

It's not a natural sentence. Perhaps it is used very informally to mean that someone stole your watch.

If you arranged for someone to steal your watch, you can say "I had my watch stolen."

I prefer "I had my watch stolen". Yes, there are two possible interpretations (the same with both "had" and "got"). The second one is more "I arranged for someone to steal my watch" than "I let ...". Being an unlikely scenario, the second interpretation would not come obviously to mind without context.
