Gerund or infinitive

How do you know if the verb should be followed by a gerund, infinitive or both?

Is there a list of verbs I should memorize or something?

The verb "To help" can be followed by either gerund or infinitive?

We are trying to help prevent spread of pollution.

help is only followed by an -ing form when it means avoid, and then it's always in the form can't/couldn't help.
