GERUND

Recently documented examples of neurogenesis, the production of new brain cells, include brain growth in mice that are placed in a stimulating environment or an increase in neurons in canaries that learn new songs.

I am really confused about the use of ARE (bold text). Can someone Please clarify Why above sentence is correct ?

And moreover what would be the difference if I use gerund (growing ) instead of growth as in sentence below

Recently documented examples of neurogenesis, the production of new brain cells, include the brain growing in mice that is placed in a stimulating environment or neurons increasing in canaries that learn new songs.

why is growth prefered over growing even though growth is not parallel to increasing?
