I understand that the phrase “two legged journey” means a journey that has two parts.
What are some other ways of describing journeys that have more than one part?

Thanks. I guess such a journey may be described as a multi-part journey. But multi-part does not sound witty. I am looking for a better phrase .

'It was a journey of several legs"
'We made the journey in two legs"
"There are a few legs to the journey"

I like your legs idea.
