Can it be used in this context (sausage description/specifications)?
Can you, please, proof-read this paragraph? Thank you.

The product filling is of characteristic consistency. Chunks of meat are visible
in cross-section. The colour is consistent, characteristic of cured meat. The casing adheres properly to the filling. Extremely small amounts of gell are allowed to be separated. The taste and smell of the product are characteristic of this type of product.

This is boring but not incorrect, except that it should be "gel" (short for gelatin) rather than "gell." (I also note that "colour" is British usage, not American.)

I would try to clarify the description a little. What are the dabs of gel separate from?

Then instead of saying

I would say
"Extremely small amounts of gel may be separated from the sausage."
