What does 'gaff' mean in:

and what's the difference between a 'gaff' and 'a mistake'?

Gaffe strongly suggests a social error, eg eating your food with your fingers when everyone else at the table is eating with a knife and fork.
It's not a suitable word to use in a chess context. I'd just say error.
