Fruit singular and plural

Hi teachers,

Can you please check these sentences?

1. There is so much fruit in this supermarket. (Should I say many fruits? If both are correct, which one of them is often used?)
2. We're choosing our favorite fruit (Should I say fruits?)
3. Carrots are not a fruit. (I heard this but not sure if I heard it right. Carrots are plural and then you have a singular fruit at the end of the sentence. Is that correct usage?)
