Hi, what is the meaning of watch several panels of "jurors" , from behind one-way mirrors and pie charts in this text?

A few weeks later, Cheesman's partner had called again, this time to inform Facher that they planned to stage a mock trial and watch several panels of "jurors"-people selected at random off the street- deliberate from behind one-way mirrors.
