Fossil fuel? fossil fuels?

Hello, grammarians!

I've come across an instance in a paper where the writer uses the term "fossil fuel," rather than "fossil fuels." For example: "We get energy from fossil fuel." "Coal, oil and natural gas are fossil fuel." Is this ever correct? Science is not my forte so, I appreciate your help.
